The Wine
Some say Vicente Garcia is stubborn. He certainly knows what he wants and goes to great lengths to get it. He made his reputation fighting the Catalans for the legal right to use the term Cava for sparkling wine produced outside of Catalunya. And in his native Utiel-Requena he planted a large part of his estate with the local Bobal grape, determined to prove it could make a lovely, supple red in its own right (his neighbours considered it fit only for blending). Notorious for its thick skin and lean, unyielding character, Bobal has much in common with Vicente. Hence the name Cabeza de Toro ('Bull's Head') was chosen for this surprisingly agreeable, quintessentially Spanish red. A match for paella, lamb chops or a slow cooked casserole.
